This page explains how to take an assistant offline for a few days using the Timeline. There is no Take offline button: to pause the assistant between two scheduled blocks, you leave uncovered days between periods.
Leave a gap between periods
Open the assistant, then Timeline.
Create two periods with at least one full day between the first end date and the next start date. The calendar already blocks overlapping dates.
The list then shows a badge: Assistant is offline for 1 day or Assistant is offline for X days. The badge appears only in the gap between two periods. Days before the first period or after the last one don't show this badge.
You can't create an empty "offline period": a period needs at least one resource and one mode. Offline here means that no period covers these days.
This is not unpublishing
Turning Make assistant public off also takes the assistant offline for learners, with the confirmation This assistant is now offline. That is publish status, not Timeline. See the publishing articles in Related below.
